I already have an ice cream machine at home with the bowl that you freeze. Had it for nearly 20 years. Works fine for soft ice cream but requires to be turned while in the freezer for high sugar content ice creams. Have used it for various ice creams, gelatos, and frozen desserts over the years with good and mixed results. It mostly turns out like soft serve. This machine is totally different...
You start by making a base, adding flavor, freezing it in two specially made canisters, then grinding it (best word I can think of) in this machine, then adding mix ins (nuts, chocolate chucks, candies, etc.). Some people complain that you have to make stuff a day in advance. Boo hoo, pony up and plan. Actually, I found that freezing the canisters in a fridge freezer worked just fine after about 12 hours.
So far I've used all the settings except smoothie (I'm not a smoothie guy that much and have a ninja blender for shakes anyway). Still trying to figure out what a smoothie bowl is. Last I checked I stopped eating baby food when I got teeth.
So here is what I've made:
1. Nutella gelato using a semi custard base (meaning I used 1 egg yolk instead of three and used 1 tablespoon of corn starch to thicken it, used light cream to reduce the fat, and more milk)
2. Another flavor of gelato using a custard base (3 egg yolks, cream, milk). Essentially this recipe was a frozen custard but called gelato (lots of different versions of gelato online)--so if you are frozen custard person, this machine might be for you--I hate paying store prices for frozen custard.
3. Salted caramel ice cream
4. Rum and raisin ice cream lite (used artificial flavoring and added the raisins as mix ins)
5. Strawberry sorbet (essentially strawberries packed in, no sugar added, ground in the machine)
6. Chocolate orange gelato
7. Maple, pecan ice cream
8. Chocolate malted milk ice cream. We mixed this one then did a remix and it came out almost like a Wendy's frosty with a similar flavor. I used malt syrup from the health food store.
I have to say, the flavors and textures from this machine were EXACTLY like what I had in Italy for the gelatos (although the other settings aren't that much different). I don't know how the genius designers came up with this thing but it is amazing! I'm a skeptic and pessimist but I was shocked at this.
Essentially this is how I understand it. First, the contents get essentially ground then mixed. This does the same job as a traditional ice cream machine (ice or frozen bowl, doesn't matter) as the intent of the continuous stirring of the bowl prevents large ice crystals from forming. The grinding aspect of this machine (which is a bit quieter than a blender, but still a bit loud) does the same job but after the stuff is frozen. You lock the canister inside another canister then lock those into place. Hit the button and wait about 2 minutes. Done. Don't like the results, do it again on remix.
Now, for all the flavors I tried, I did different things. I got a couple off the internet for the machine (their website has some recipes), one or two from other sources, then made up the rest of my own. I changed the ratios of milk, cream, eggs, sugar, and changed the thickeners on some to starch, egg yolks, full eggs, and guar gum to see how the machine would perform. Seemed to work well. Harder contents tend to make the machine sound a bit stressed but it was fine. I also found that chopping the add-ins helped them mix them in. The mixing went well with even distribution. I also followed directions that said leave the canister out of the freezer for a few minutes or in the fridge for 20 minutes or so. Doing so helped make a creamier product. Not doing so, especially for lower fat ice cream, resulted in a crumbly texture that had to be remixed (one of the settings). Then it came out like ice cream.
Some people complain that the blades don't touch the bottom and sides of the canister. No kidding, it would break the machine if they did. Sounds like a first world problem. Just mix it in with a spatula then remix if you have to.
The size is about the size of a coffee machine.
One thing I noticed, is that the products (less sorbets) come out heavier than commercial ice cream. This is because there is no overwhip (air added). I actually prefer the product from this machine over commercial ice creams because the product tastes richer, creamier, and thicker.
I like the fact that the machine handles different densities of frozen product with reduced fat but keeps the flavor. You can even make it healthy if you want with reduced cream and reduced eggs. In fact, the sorbet was just fruit, no sugar, or other stuff. Worked on the fruit like a Yo Nanas machine (which I also have). But unlike that machine, you can't grind up big hunks of stuff like cookies in the Creami.
I thought, "well if this works to make gelato creamy, maybe it can do the same for hummus like my favorite shawarma place." Tried it with cooked chickpeas and other ingredients less garlic which I mixed in later (didn't want to flavor the canisters). Tried it frozen too then melted it. Didn't work so well for hummus. The hummus was good, but not quite as creamy as my shawarma place that won't tell me how they do it.
I thought that the 500ml canisters would be too small for 5 people. Not the case, since the product is richer, smaller portions ensue. I would like to get 4 more so I have a variety of canisters with various flavors but I'm not keen on spending $12 per canister. That is the only disadvantage.
I really love this machine and am glad I got it.
Be warned though, it is especially noisy. Start it, and leave the room while it runs. Other than that caveat it's been pretty great. I've made the chocolate, vanilla and cinnamon bun as well as the strawberry and all are great. The sorbet based on a single fruit is not as tasty as I had hoped, but I bet on a hot summer day it will still be a nice cool down.
