I thought I could explain how it works for these devices in the background since I studied/work in a relevant field, But I'm really sorry that those youtubers weren't entertaining your rants and focused elsewhere. Afraid not, you don't need youtubers for this, a simple search would suffice. Since you got your hands tied up dissing moto for their UFS choice as it seems that could have done a better job, I'll save you some time.
Nokia C32 vs other likely devices with SoC ≥ SD680. Albeit being possible, it's less probable and even less plausible cause the snapdragon 680 is indeed better than UNISOC 9863A due to the difference in generation of the fabrication used and choice of its ARM cores.
Anyways, the possible reasons could be:
1. Nokia doesn't use their own skin/UI on top of android compared to other brands who use resource heavy custom skins such as MiUI, One UI, Color OS, Funtouch, Magic UI etc. This reduces the load and increases speed (Not by much because of advancements in processing)
2. The OS decides the amount and intensity for the cores to run based on the computational necessity which is again decided by manufacturers.
3. One should consider the difference in idle, sustained and peak performances of SoCs cause this makes a lot of difference.
On peak performance, SoCs rely mostly on performance cores and idle performance relies on power efficient Cortex A55 cores. So day to day tasks will be done by A55 cores, UNISOC got 8 x A55 but Snapdragon 680 got only 4 of those and that too a generation older A53. But a sustained workload or a peak load would warrant usage of both performance/efficiency cores (i.e. A73 and A53 in 680 with/without inclusion of a much powerful GPU in comparison) and here is where 680 shines ahead since UNISOC comes only with 8 efficiency cores.

Camera is decent I would say. Can stay on par with the S20FE 5G I have.
Thing to note is even after having that UFS 2.2, it is very snappy. My S20FE feels slow after using this.

The detail to know here is, Moto has probably used a good quality flash and optimised it's speed to produce twice the 'Random Read/Write speed' (Not sequential R/W) of Oneplus devices at the same price range using UFS 3.1. This hasn't been a mere claim, but experimentally tested and benchmarked live by a few youtubers.

Unless its an editing mistake, moto actually uses lower end or older version of Gorilla Glass (could be GG3) which they intentionally didn't want users to know about.
