I purchased this because I am diabetic and severely lactose intolerant. I use unsweetened oat milk. I tried using the sugar-free jello instant pudding, but it doesn't seem to set with plant-based dairy alternatives.
The directions on this keto pudding says to use 1 1/4 cups of milk substitute (oat, soy, coconut, rice, or almond milk).
The first time I made it using oat milk, I followed the instructions and used 1 1/4 cups. I mixed it with an immersion blender. It was very thick and lumpy. Thicker than a pudding should be, and it was very grainy.
The next time I tried it I used 1 1/2 cups of oat milk. This time I used a hand mixer. It was still very grainy and too thick. I added a little bit more oat milk and continued to blend it. It had the consistency of what pudding should be, but so much air had been whipped into it that it looked lumpy because of all of the air bubbles. The pictures I'm attaching are from this batch.
I used a spoon and folded the pudding for a couple of minutes to try and work out some of the air. I put it into the fridge and the next day after I stirred it, the bubbles had dispersed and the pudding looked smooth.
I estimate that I used a total of about 1 3/4 cup of oat milk.
It is very sweet, and it has a very artificial sweetener aftertaste that lingers. I use erythritol all the time, and have never noticed an artificial sweetener aftertaste. I think the aftertaste is coming from the Stevia extract.
The chocolate flavour is not as intense as the jello sugar-free chocolate pudding, and despite the overall sweetness of the pudding, the chocolate has a slightly bitter aftertaste.
I have two more boxes in my cupboard that I'm going to keep for chocolate craving emergencies.
This is not a product that I would buy on a regular basis. If you plan on serving this as a dessert to somebody, you need to make it at least a day in advance so the bubbles disperse.
It isn't completely awful, but it is an acquired taste.
So far as value goes, it's not bad if you can get the full 2 cups using regular milk. It becomes expensive, or rather more expensive, when using plant-based Dairy and the end product only gives between 1 1/4 and 1 3/4 cups of pudding.
