TAKE A WALK ON THE WILD SIDEWine making has never been so simple. Before starting, be sure to clean and sanitize equipment to be used. Bring all kit components up to room temperature. |
1. PRIMARY FERMENTATIONMix 2L of hot water and bentonite. Pour contents of juice base bag. Top fermenter up to 23L with good quality cool drinking water. If included, stir in oak chips or granular oak now. Use a hydrometer to measure and record the Day 1 Specific Gravity (S.G.). Sprinkle dry year on top of juice base. Cover with lid and keep fermentation area warm (20°C to 25°C or 68°F to 77°F) for the entire winemaking process. |
2. STABILIZING/DEGASSINGOn Day 14, measure the S.G. If wine is not in required range, check again in 48 hours Carefully syphon wine into a sanitized carboy, leaving sediment behind. Add contents of sulphite/sorbate package into carboy. Agitate wine with a stirring spoon. Stir in one package of kieselsol, saving the second package for later if there are two. Fit airlock filled halfway with sulphite solution into the neck of the carboy and leave for 24 hours. |

3. CLEARINGOn Day 15, stir the contents of the Reserve(s) into the carboy, if included. Stir in Chitosan(s). If included, add second Kieselsol 1 hr after Chitosan addition. If included, stir in Oak Cubes. Replace lid/airlock and let wine sit in a warm (20°C to 25°C / 68°F to 77°F), undisturbed area, away from direct heat and light. After 5 days, twist carboy without lifting to allow any sediment stuck on the walls to drop. Continue clearing process according to chart provided. |
4. POLISHING RACK/AGINGWine should be perfectly clear. If not, leave wine another 7-14 days to finish clearing. Carefully rack wine off of sediment (and oak cubes if present) into a clean and sanitized carboy fitted with a solid bung. Leave wine to sit undisturbed a minimum of 2 days to allow settling. |
5. BOTTLING (CLEAR WINE ONLY)Carefully syphon your wine into clean and sanitized bottles. Cork bottles and leave upright for 3-5 days, allowing cork. to expand. Invert or store on side to keep cork moist. Store wine at 11°C to 18°C or 52°F to 65°F. If choosing to carboy age wine, top-up with a similar style wine and fit with a solid stopper. Bottle aging is the preferred method. |

Recommended!
I'm not a heavy drinker myself, I'm all about the experience and I'll dump a batch down the toilet if I don't like it, but I've yet to dump a batch made with a wild grapes kit. I've yet to share with someone who didn't like the taste. I've even had a a few people request I make them a batch. I don't have the time for that, but it's a great compliment to the wine kit itself, as well as to myself in some small part I suppose lol.
I hope wild grapes continue to uphold the quality, especially with the less than ideal growing conditions vineyards are experiencing everywhere. Another brand of wine kit I used to swear by was bought out a few years back, and the kits became trash overnight, using very little grape juice and cutting with pear or apple (which is very bad!). So long as Wild Grapes doesn't change what they're doing, I'll keep singing their praises. If the quality drops, I'll be back on here in a hurry to change my review.
I only used the juice concentrate and yeast.
I've made quite a few wine kits and I prefer not to add sulphites and potassium sorbate. I skip the finings and bentonite because I have a mini jet filter system. I didn't add oak because I don't really plan to age this batch much.
it tastes great, even on bottling day. Easy to drink, fruity and balanced not overly dry or acidic.

I've made beer and wine many times and the yeast was pretty much expired eight after I got it.
Pail full of grape juice with no fermentation.
This was a Christmas gift, so we didn't see it was expired until after the return date.
Very disappointed with products recently.
If I could send back a bag of juice I would.
