Tasty plain out of the bottle or as a cooking ingredient for soups and more. Pickle soup is a unique flavor, one small bottle can flavor a very large pot (5-10L) use only part of the bottle for smaller soups.
Oil pickles (rather than in water) are also awesome because you get extra calories for your dollar. The oil ends up infused with whatever is stored in it, vegetables in this case with some herbs and garlic. Infused oil is also nice to be used with the vegetables when cooking or separately as a cooking ingredient on it's own. I suspect this was likely the more common method in times when pickling was a more regular method of vegetable storage before refrigeration and global shipping. Stores calories for winter!
I personally feel oil pickles are much more practical, authentic and artisanal than those done in water. I also suspect that they last a lot longer before and after opening. They provide better value per dollar in terms of calories! If I was a medieval lord or king this is how I'd want my produce stored for long term.
