Campbell's Reduced Sodium Tomato Soup, 284ml

Speedy Pulled Pork

Prep Time: 10 Min Cook Time: 30 Min Serves: 6.

Directions:

In a small bowl, stir together soup, apple juice, brown sugar, and vinegar. Set aside.

In a large saucepan, heat oil over medium heat. Sauté onion and garlic for 3-5 minutes, or until browned. Stir in paprika, mustard, chili powder, pepper and bay leaf.

Reduce heat, cover and simmer for 20 -25 minutes, or until pork is cooked through. Remove pork and cool slightly. Discard bay leaf.

Using two forks, shred or “pull” pork apart; return to the hot liquid.

Ingredients:

  • 1 can (284 mL) CAMPBELL'S Condensed 50% Less Salt Tomato
  • 1/4 cup (60 mL) apple juice
  • 2 tbsp (30 mL) brown sugar
  • 2 tbsp (30 mL) cider vinegar
  • 1 tbsp (15 mL) canola oil
  • 1 medium  onion, thinly sliced
  • 2 cloves garlic, chopped
  • 1 tsp (5 mL) smoked paprika(or 2 tsp/10 mL regular paprika)
  • 1 tsp (5 mL) dry mustard
  • 1 tsp (5 mL) chili powder
  • 1/2 tsp (3 mL) freshly ground  black pepper
  • 1 bay leaf
  • 2 small  pork tenderloin, cut into 2.5” (6 cm) long pieces

For some reason none of the supermarkets near me (downtown Toronto) stock the low sodium version of Campbell's Tomato Soup...I guess this is one of the reasons Amazon exists.
Once you've become accustomed to the low-sodium version, you'll find the regular version to be way too salty...not a bad thing actually.
