I have the Mac Mini and the biggest feature I feel is missing from it is, dictate speech to text as in the iPad. This is so that I do not have to type long emails and can also dictate speech to text my notes. If I want to start using it on the Mac Mini ? What do I need ? A Mic ? What is the best portable Bluetooth mic that I can have to do this Job ?

A set of airpods would do.
There are loads of cheap usb or blutooth mics out there. Most are rubbish quality, but made to look like real studio mics.
Without having tested this myself, I have the impression that the old wired apple earplugs have the best sound on the mic simply because the mic sits in a much better position to pick up the voice.

A good mike might help but the current MacOS dictation is not useful for long emails. It seems to shut off after a short paragraph or so. I'm guessing that might be related to memory use but not worth buying another Mac with lots of expensive memory to find out.
